Taste



I have to admit I'm a bit bored with the whole breakfast thing lately...
tired of fried eggs every weekend, I've been searching for something new to try 
- and this is it!!

Puffed Cheese Omelette

1/4 cup mascarpone
1 tbsp chopped chives
2 eggs, separated
2 tbsp cream
salt and pepper
30g butter
1 tbsp grated parmesan
1 tbsp grated cheddar
extra grated parmesan, to serve

Combine the mascarpone and chives, set aside.  
Place egg yolks, cream, salt and pepper in a bowl and whisk to combine.  
Whisk the eggwhites until stiff peaks form and fold through the egg yolk mixture.  
Melt the butter in a 20cm non-stick pan over medium heat.  
Pour the egg mixture into the pan and cook for 5 mins.  
Sprinkle with the parmesan and cheddar.  
Spoon the mascarpone mixture onto one side of the omelette and carefully 
fold over to enclose the filling.  Cook a further 1-2 mins.  
Sprinkle with extra parmesan to serve.  Serves 2.  
Lovely served with roasted tomatoes and wilted spinach.
